INGREDIENTS
1 pound lean ground beef
1/2 teaspoon chili powder
1/8 teaspoon pepper
1/2 cup tomato salsa, divided
8 small whole-grain tortillas
1/2 cup shredded romaine lettuce
1/4 cup shredded reduced-fat cheddar cheese
Green-onion strips
DIRECTIONS
1. Cook beef on medium heat. Drain well and return to pan. Mix in the chili powder and pepper; cook for about 1 minute. Stir in cup salsa; heat through.
2. Warm the tortillas in the oven for a few minutes and spoon on meat mixture. Top with lettuce, cheese, and the remaining cup of salsa. Roll up and tie each taco with an onion strip.
